Turn ripe avocados into decadent brownies kids will love

It’s August, which means avocados are in season! And what better way to celebrate than with this decadent avocado chocolate chip brownie recipe from Ambitious Kitchen

Chocolatey, gluten-free and downright addictive, these fudgy, fiber-packed avocado black bean brownies are a sweet and sneaky way to treat your kids to a healthy dessert. Plus, they’re the perfect excuse to finally get rid of your overripe avocados and that half-opened tin of black beans sitting in your fridge. 

While avocados and black beans don’t exactly scream delicious dessert, trust us when we say no one will be able to taste the sneaky ingredients in these flourless chocolate chip brownies.

Avocado Black Bean Chocolate Chip Brownie Recipe

Ingredients

  • 1 (15 oz) can black beans, drained and rinsed
  • 1 egg
  • 2 egg whites
  • ½ large ripe avocado
  • 1 tsp coconut oil
  • ⅔ cup unsweetened cocoa powder (good quality)
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 2 tsp pure vanilla extract
  • ⅔ cup brown sugar or maple syrup
  • ⅓ cup chocolate chips of your choice + 2 tbsp for topping

Instructions

  1. Preheat oven to 350°F and grease an 8”x 8” baking pan.
  2. Blend all ingredients except chocolate chips in a blender or food processor until it becomes a smooth batter. If the mixture is too thick and won’t blend, add 1-2 tsp of water. Just make sure to not thin out the batter too much, since it needs to be very thick in order to produce fudgy brownies.
  3. Fold in ⅓ cup of chocolate chips. You can also add nuts if you want.
  4. Pour batter into baking pan and sprinkle remaining 2 tbsp of remaining chocolate chips. 
  5. Bake for 25-25 minutes or until top of the brownies begins to crack and toothpick inserted in centre comes out somewhat clean.
  6. Cool completely before cutting into 12 squares.
