20-minute seasonal jam recipe to cure your late winter blues

There’s just something about a warm slice of toast with a slather of butter topped with a tart, fruity jam–there’s truly nothing quite like it. 

Making an at-home jam is a great way to use your overripe fruits on your shelves and can even serve as an incentive to buy seasonal fruits to support your local food merchants!

The perfect jam recipe

Ingredients

  • 6 cups of berries (your choice!)
  • 2 tablespoons lemon juice (fresh or bottled) 
  • 2 cups of sugar 

Instructions

  1. In a large saucepan, add the berries, sugar and lemon juice. 
  2. Gently stir the berry mixture and bring to a boil over medium-high heat. 
  3. Reduce to a soft boil on medium heat and cook, uncovered, stirring frequently, for about 20 minutes or until the jam has thickened.
  4. To test the thickness of the jam, at the start of cooking time place a few spoons or ceramic ramekins in the freezer for 10 minutes. 
  5. Take out one spoon or ramekin and add a dollop of jam to the back of the spoon or ramekin. If it mostly sets, you're ready to go. If it's too runny, cook and test in 5-minute increments until the jam sets on the spoon. If the jam isn’t set, continue to cook for 5-minute increments.
  6. Spread on toast or sandwiches once cooled, or transfer the jam to a glass jar with a fitted lid and store in the refrigerator for up to 2 weeks.
